Make tender, fluffy sweet potato rolls perfect for any dinner or holiday meal. This recipe yields soft, slightly sweet bread with a beautiful golden color.

  • 1 cup mashed sweet potato (about 1 large sweet potato)
  • 1/2 cup warm milk (105-115 degrees F)
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 large egg, room temperature
  • 1 teaspoon salt
  • 3 1/2 to 4 cups all-purpose flour
  • 1 egg, beaten (for egg wash)

Instructions

  1. Combine the warm milk and yeast in a small bowl. Let stand for 5 minutes until foamy.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the mashed sweet potato and the egg until combined.
  3. Add the yeast mixture and salt to the sweet potato mixture. Mix well.
  4. Gradually add the flour, one cup at a time, mixing until a soft dough forms. You may need slightly less or more flour.
  5. Turn the dough out onto a lightly floured surface. Knead for 5 to 7 minutes until the dough is smooth and elastic.
  6. Place the dough in a lightly oiled bowl, turning to coat. Cover the bowl with plastic wrap and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.
  7. Punch down the risen dough gently. Divide the dough into 12 or 16 equal pieces. Roll each piece into a smooth ball.
  8. Place the dough balls close together in a greased 9×13 inch baking pan. Cover and let rise again for 30 to 45 minutes, or until puffy.
  9. Preheat your oven to 375 degrees F. Brush the tops of the rolls lightly with the beaten egg wash.
  10. Bake for 15 to 20 minutes, or until the tops are golden brown.
  11. Remove from the oven. Brush the tops immediately with melted butter for extra flavor and shine. Serve warm.

Notes

  • For the best texture, ensure your mashed sweet potato is smooth and not watery.
  • If you prefer a richer flavor, substitute half of the all-purpose flour with bread flour.
  • These rolls freeze well after baking. Cool completely, place in an airtight bag, and freeze for up to 3 months. Reheat in a 350 degree oven until warm.
