Ingredients
Scale
1/2 cup (115g) unsalted butter, melted
1 cup (200g) granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/3 cup (40g) unsweetened cocoa powder
1/2 cup (65g) all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
1/2 cup (120g) creamy peanut butter
Instructions
Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
In a medium bowl, whisk together the melted butter and granulated sugar until combined.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate small bowl, whisk together the cocoa powder, flour, salt, and baking powder.
Gradually add the dry ingredients to the wet ingredients, mixing only until just combined. Do not overmix to keep the brownies fudgy.
Pour the brownie batter into the prepared pan and spread evenly.
In a small, microwave-safe bowl, warm the 1/2 cup of peanut butter for about 15-20 seconds until it is slightly softened and easily spoonable.
Drop spoonfuls of the softened peanut butter over the top of the brownie batter.
Use a knife or a skewer to gently swirl the peanut butter into the chocolate batter, creating a marbled pattern. Do not mix completely.
Bake for 25 to 30 minutes. The edges should look set, and a toothpick inserted near the center should come out with moist crumbs attached, not wet batter.
Let the brownies cool completely in the pan before lifting them out using the parchment paper overhang. Cut into squares and serve.
Notes
For the fudgiest brownies, avoid using a mixer for the dry ingredients; hand-mixing prevents overdeveloping the gluten.
If your peanut butter is too stiff to swirl, warm it slightly. You want it soft, not runny.
To get that perfect, gooey center, pull the brownies out of the oven when a toothpick shows moist crumbs.
These marbled chocolate treats keep well stored in an airtight container at room temperature for up to four days.
