2 cups rolled oats
1 cup crispy rice cereal
1/2 cup peanut butter (or other nut butter)
1/2 cup honey or maple syrup
1/4 cup ground flaxseed
1 teaspoon vanilla extract
1/2 cup mix-ins (e.g., dried fruit, mini chocolate chips, chopped nuts)
1/4 teaspoon salt
Instructions
Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
In a large microwave-safe bowl, combine the peanut butter and honey (or maple syrup). Microwave for 30 to 45 seconds until softened and easily stirrable.
Stir the vanilla extract and salt into the warm mixture until fully combined.
Add the rolled oats, crispy rice cereal, and ground flaxseed to the bowl. Mix well until all dry ingredients are evenly coated with the binder.
Stir in your chosen mix-ins.
Press the mixture firmly and evenly into the prepared pan. Use the back of a spatula or another piece of parchment paper to compact it tightly.
Refrigerate the bars for at least 2 hours, or until completely firm.
Use the parchment overhang to lift the block from the pan. Cut into 12 or 16 bars.
Notes
For a firmer bar, chill for 3 hours.
Store leftover bars in an airtight container in the refrigerator for up to one week.
Substitute peanut butter with sunflower seed butter for a nut-free version.
If you prefer chocolate chip granola bars no bake, add 1/2 cup of mini chocolate chips.
