Optional: 1/2 cup mini peanut butter cups for topping
Instructions
In a large bowl, beat the softened cream cheese until smooth.
Add the peanut butter, powdered sugar, and vanilla extract to the cream cheese. Beat until the mixture is fully combined and creamy.
Gently fold in the thawed whipped topping until no streaks remain. Do not overmix.
Spoon the peanut butter filling evenly into the graham cracker crust.
Chill the pie in the refrigerator for at least 4 hours, or until firm.
To make the topping, combine the chocolate chips and butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until smooth.
Stir the heavy cream into the melted chocolate mixture until you have a smooth ganache. Let it cool slightly.
Pour the chocolate ganache over the chilled pie filling.
If using, sprinkle the mini peanut butter cups over the top of the ganache.
Return the pie to the refrigerator for another 30 minutes to set the topping before slicing and serving.
Notes
You can substitute the graham cracker crust with an Oreo cookie crust for a chocolate base.
For a firmer filling, use 1 cup of cold heavy cream instead of whipped topping and beat it until stiff peaks form before folding it in.
This pie keeps well in the refrigerator for up to four days.
