A hearty and comforting soup featuring chicken, spinach, sun-dried tomatoes, and Parmesan cheese in a creamy broth.

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 medium yellow onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon dried thyme
  • 1/4 cup sun-dried tomatoes in oil, drained and chopped
  • 6 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 5 ounces fresh spinach
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chicken pieces and cook until browned on all sides, about 5 to 7 minutes. Remove the chicken and set it aside.
  3. Add the onion, carrots, and celery to the pot. Cook until softened, about 5 minutes.
  4. Stir in the minced garlic, Italian seasoning, and thyme. Cook for 1 minute until fragrant.
  5. Add the chopped sun-dried tomatoes and chicken broth to the pot. Bring the mixture to a simmer.
  6. Return the cooked chicken to the pot. Reduce the heat to low, cover, and simmer for 10 minutes, or until the chicken is cooked through.
  7. Stir in the heavy cream and Parmesan cheese. Heat gently until the cheese melts; do not boil.
  8. Stir in the fresh spinach until it wilts, about 2 minutes.
  9. Season with salt and pepper to your preference. Serve hot.

Notes

  • For a low carb option, omit any pasta or beans you might add to other recipes.
  • You can use rotisserie chicken instead of raw chicken to speed up the process.
  • If you prefer a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the simmering broth before adding the cream.
