Make this hearty, cozy stuffed pepper soup in one pot for an easy, comforting meal perfect for cold weather.

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup uncooked white rice
  • 1/2 cup water
  • 1 cup shredded cheddar cheese (optional, for topping)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and cook until browned. Drain off any excess fat.
  2. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
  3. Add the chopped green and red bell peppers to the pot. Cook for 5 minutes until they start to soften slightly.
  4. Pour in the crushed tomatoes and beef broth. Stir in the oregano, basil, salt, and pepper. Bring the mixture to a simmer.
  5. Stir in the uncooked white rice and the 1/2 cup of water. Reduce the heat to low, cover the pot, and let it simmer for 15 to 20 minutes, or until the rice is tender and cooked through. Stir occasionally to prevent sticking.
  6. Ladle the hot soup into bowls. If desired, top each serving with shredded cheddar cheese and let it melt before serving.

Notes

  • For a different flavor, substitute ground turkey or ground sausage for the ground beef.
  • If you prefer softer peppers, add them with the broth and simmer for 10 minutes before adding the rice.
  • This soup thickens as it cools; add a splash of extra broth when reheating if needed.
