Make decadent, restaurant-style stuffed French toast with a creamy cheese filling and fresh berries. This recipe works for individual servings or as a make-ahead casserole.

  • 8 thick slices brioche bread
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/2 cup mixed berries (strawberries, blueberries)
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons butter, for cooking

Instructions

  1. Prepare the filling: In a bowl, beat the softened cream cheese, 1/4 cup sugar, and vanilla extract until smooth. Gently fold in the mixed berries.
  2. Assemble the sandwiches: Spread the cream cheese mixture evenly onto one side of four bread slices. Top each with the remaining four slices, forming four sandwiches. Gently press the edges to seal.
  3. Make the batter: In a shallow dish, whisk together the milk, 2 eggs, cinnamon, and nutmeg.
  4. Dip the sandwiches: Quickly dip each assembled sandwich into the egg batter, coating both sides. Do not soak the bread.
  5. Cook the toast: Melt butter in a large skillet over medium heat. Cook the stuffed sandwiches for 3 to 4 minutes per side, until golden brown and cooked through. Reduce heat if the outside browns too quickly before the center warms.
  6. Serve immediately with powdered sugar or maple syrup.

Notes

  • For a crispier exterior, you can bake the assembled, dipped sandwiches at 375°F for 15 minutes after pan-frying, or bake the casserole version entirely.
  • Use thick-cut bread like brioche or challah for the best structure.
  • If making ahead, assemble the sandwiches, wrap them tightly, and refrigerate for up to 24 hours. Dip and cook just before serving.
