Creamy Slow Cooker Chicken and Dumplings

Make classic, comforting chicken and dumplings with minimal effort using your slow cooker and pre-made biscuits for fluffy dumplings.

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (10.5 ounce) can condensed cream of celery soup
  • 1 (14.5 ounce) can chicken broth
  • 1 medium onion, chopped
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 cup shredded carrots (optional)
  • 1 (16.3 ounce) package refrigerated biscuit dough, cut into quarters
  • 1/2 cup milk (for thinning gravy)

Instructions

  1. Place the chicken breasts or thighs in the bottom of your slow cooker.
  2. Pour the cream of chicken soup, cream of celery soup, and chicken broth over the chicken.
  3. Add the chopped onion, thyme, salt, and pepper. Stir gently to combine the liquids around the chicken.
  4. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is cooked through and tender.
  5. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.
  6. If using carrots, add them now. Stir everything together.
  7. Increase the slow cooker setting to high if it is not already there.
  8. Arrange the quartered biscuit pieces evenly over the top of the chicken mixture. Do not stir them in.
  9. Cover and cook on high for 30 to 45 minutes, or until the dumplings are puffed and cooked through. Check the center of a dumpling to ensure it is done.
  10. Stir in the milk to reach your desired gravy consistency. Serve immediately.

Notes

  • For a thicker gravy, mix 2 tablespoons of cornstarch with 1/4 cup of cold water before stirring it into the stew during the last 15 minutes of cooking.
  • You can substitute cream of mushroom soup for the cream of celery soup if you prefer.
  • Use chicken thighs for richer flavor, or breasts for leaner meat.
