Ingredients
Scale
1 pound breakfast sausage (pork or turkey)
8 ounces cream cheese, softened
1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
1 cup shredded cheddar cheese (optional, for extra cheesiness)
1/4 cup heavy cream (optional, for extra creaminess)
Salt and pepper to taste
Instructions
Brown the sausage in a large skillet over medium heat, breaking it up as it cooks. Drain off any excess grease completely.
Reduce the heat to low. Add the softened cream cheese to the skillet with the cooked sausage. Stir until the cream cheese is fully melted and combined with the sausage.
Stir in the undrained Rotel tomatoes and green chilies. Mix well until everything is heated through and smooth.
If using, stir in the shredded cheddar cheese and heavy cream until the cheese melts and the dip reaches your desired creamy consistency.
Season with salt and pepper if needed. Taste and adjust seasonings.
Serve the hot cheese dip immediately with tortilla chips, crackers, or vegetable sticks.
Notes
For slow cooker preparation, combine all ingredients in a small slow cooker. Cook on low for 2-3 hours or on high for 1-1.5 hours, stirring occasionally until smooth and hot.
Using hot breakfast sausage adds a nice kick to this savory warm dip.
If the dip thickens too much while serving, stir in a tablespoon of milk or cream to loosen it up.
