Easy Slow Cooker BBQ Pulled Chicken

Prepare tender, juicy BBQ pulled chicken using your slow cooker. This recipe is simple to make and perfect for weeknight dinners or meal prep.

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup BBQ sauce (your favorite kind)
  • 1/2 cup chicken broth
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. In a separate bowl, whisk together the BBQ sauce, chicken broth, apple cider vinegar, smoked paprika, garlic powder, salt, and pepper.
  3. Pour the sauce mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is very tender.
  5. Remove the chicken breasts from the slow cooker and place them on a cutting board or in a large bowl.
  6. Shred the chicken using two forks.
  7. Return the shredded chicken to the slow cooker and stir well to coat it completely with the sauce.
  8. Cook on warm for 15 minutes to allow the flavors to combine before serving.

Notes

  • For extra flavor, add half a chopped onion to the slow cooker before cooking.
  • If you prefer a thicker sauce, remove the lid for the last 30 minutes of cooking on high.
  • This chicken is excellent served on buns for sandwiches, over rice, or mixed into salads.
