1 cup rolled oats
1/2 cup natural peanut butter
1/2 cup whey or plant-based protein powder (vanilla or unflavored)
1/4 cup honey or maple syrup
1/4 cup dark chocolate chips
Instructions
Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
In a medium bowl, combine the rolled oats, protein powder, peanut butter, and honey or maple syrup.
Mix the ingredients thoroughly until a thick, uniform dough forms. If the mixture is too dry, add one teaspoon of water or milk at a time until it holds together.
Press the dough evenly into the prepared pan. Use a spatula or the bottom of a glass to pack it down firmly.
Sprinkle the chocolate chips over the top and gently press them into the dough.
Place the pan in the refrigerator for at least 2 hours, or until firm.
Lift the bars out using the parchment paper overhang and cut into 10 equal rectangles.
Notes
For a vegan option, use maple syrup instead of honey and a plant-based protein powder.
If you prefer a firmer bar, chill them in the freezer for 30 minutes before cutting.
Store the finished bars in an airtight container in the refrigerator for up to one week.
