  • 3 lbs russet potatoes, peeled and thinly sliced
  • 1 cup heavy cream
  • 1 cup milk
  • 1/2 cup unsalted butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 8 oz cream cheese, cubed
  • 2 cups sharp cheddar cheese, shredded, divided
  • 1 cup sour cream
  • 1/2 cup cooked bacon, crumbled
  • 1/2 cup crushed cornflakes or crackers (for topping)
  • 2 tablespoons melted butter (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a medium saucepan, combine the heavy cream, milk, 1/2 cup butter, salt, pepper, garlic powder, and onion powder. Heat over medium heat until the butter melts and the mixture is hot, but do not boil.
  3. Add the sliced potatoes to the saucepan. Stir gently to coat them completely in the liquid mixture. Remove from heat.
  4. In a separate large bowl, combine the cubed cream cheese, 1 cup of the shredded cheddar cheese, sour cream, and crumbled bacon. Mix until just combined.
  5. Gently fold the potato and cream mixture into the cheese and bacon mixture. Mix carefully to coat the potatoes without breaking them too much.
  6. Pour the entire mixture into your prepared baking dish, spreading it into an even layer.
  7. In a small bowl, mix the crushed cornflakes or crackers with 2 tablespoons of melted butter. Sprinkle this mixture evenly over the top of the casserole.
  8. Bake for 45 to 55 minutes, or until the casserole is bubbly and the topping is golden brown.
  9. Remove from the oven and let it rest for 10 minutes before serving. Sprinkle the remaining 1 cup of cheddar cheese over the top during the last 5 minutes of baking, or immediately after removing from the oven for extra meltiness.

Notes

  • For a make-ahead side dish, assemble the entire casserole, cover it, and refrigerate for up to 24 hours. Add about 15 minutes to the baking time if baking directly from the refrigerator.
  • If you prefer a crispier topping, you can skip the cheese sprinkle at the end and just use the buttery cornflake topping.
  • This recipe works well as a main dish if you increase the bacon or add cooked, shredded chicken.
