Make this simple, flavorful one-pot meal featuring tender chicken, rice, and a creamy tomato basil sauce. Cleanup is minimal.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup uncooked long-grain white rice
  • 3 cups chicken broth
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves, chopped

Instructions

  1. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat.
  2. Add the chicken pieces and cook until lightly browned on all sides, about 5 minutes. Remove the chicken and set it aside.
  3. Add the chopped onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Stir in the diced tomatoes (with their juice), uncooked rice, chicken broth, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
  5. Return the browned chicken to the skillet. Reduce the heat to low, cover the skillet, and simmer for 18 to 20 minutes, or until the rice is tender and most of the liquid is absorbed. Do not lift the lid during this time.
  6. Remove the skillet from the heat. Stir in the heavy cream and Parmesan cheese until the sauce is creamy.
  7. Stir in the fresh chopped basil. Let the dish rest, covered, for 5 minutes before serving.

Notes

  • For extra flavor, use fire-roasted diced tomatoes.
  • If the sauce seems too thick after stirring in the cream, add a splash more broth or milk to reach your desired consistency.
  • Use Arborio rice for an even creamier texture, but adjust the liquid slightly and cook time as needed.
