1 tablespoon olive oil
1 medium yellow onion, chopped
8 ounces cremini mushrooms, sliced
3 cloves garlic, minced
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
4 cups vegetable broth
1 (14.5 ounce) can diced tomatoes, undrained
1/2 cup heavy cream
6 ounces lasagna noodles, broken into 1-inch pieces
5 ounces fresh spinach
1/2 cup ricotta cheese, for topping
1/4 cup grated Parmesan cheese, for topping
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook until soft, about 5 minutes.
Add the mushrooms and cook until they release their liquid and start to brown, about 7 minutes.
Stir in the garlic, Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
Pour in the vegetable broth and add the diced tomatoes. Bring the mixture to a boil.
Add the broken lasagna noodles. Reduce the heat to medium-low, cover, and simmer for 10 to 12 minutes, stirring occasionally, until the pasta is tender.
Stir in the heavy cream until fully combined.
Add the fresh spinach in batches, stirring until it wilts into the soup, which takes about 2 minutes.
Serve the soup hot. Top each bowl with a spoonful of ricotta cheese and a sprinkle of Parmesan cheese.
Notes
You can substitute turkey sausage or ground beef for part of the mushrooms if you prefer a meat version.
For a thicker soup, let it simmer uncovered for the last 5 minutes of cooking.
Use no-boil lasagna noodles if you prefer, but you may need to slightly increase the simmering time.
