1 tablespoon olive oil
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 medium onion, chopped
2 cloves garlic, minced
1 cup long-grain white rice, uncooked
2 cups chicken broth
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup heavy cream
1/2 cup frozen peas
1/4 cup grated Parmesan cheese
Instructions
Heat the olive oil in a large pot or Dutch oven over medium-high heat.
Add the chicken pieces and cook until browned on all sides, about 5 minutes. Remove the chicken and set it aside.
Add the chopped onion to the pot and cook until soft, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Stir in the uncooked rice, chicken broth, thyme, salt, and pepper. Bring the mixture to a boil.
Reduce the heat to low, cover the pot, and simmer for 15 minutes, or until the rice is tender and most of the liquid is absorbed. Do not lift the lid during this time.
Return the cooked chicken to the pot. Stir in the heavy cream, frozen peas, and Parmesan cheese.
Cook uncovered over low heat for 2-3 minutes, stirring gently until the chicken is heated through and the sauce is creamy.
Serve immediately.
Notes
For best results, use long-grain white rice. Brown rice requires more liquid and a longer cooking time.
You can substitute chicken thighs for breasts if you prefer darker meat.
Stir in fresh parsley at the end for added color and fresh flavor.
