  • 4 turkey breast cutlets (about 4 oz each)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, drained and chopped
  • 2 cups fresh spinach

Instructions

  1. Season the turkey cutlets on both sides with salt, pepper, and paprika.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the turkey cutlets and cook for 3 to 4 minutes per side until golden brown and cooked through. Remove the turkey from the skillet and set aside on a plate.
  3. Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the minced garlic and cook for about 30 seconds until fragrant. Do not let the garlic burn.
  4. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let the broth simmer and reduce slightly for 1 minute.
  5. Stir in the heavy cream and bring the mixture to a gentle simmer. Cook for 2 minutes until the sauce begins to thicken slightly.
  6. Stir in the Parmesan cheese until the sauce is smooth. Add the chopped sun-dried tomatoes.
  7. Add the fresh spinach to the sauce. Stir until the spinach wilts, which takes about 1 to 2 minutes.
  8. Return the cooked turkey cutlets to the skillet. Spoon the sauce over the cutlets. Heat through for 1 minute.
  9. Serve immediately directly from the pan.

Notes

  • To keep the cutlets tender, avoid overcooking them in the initial searing step. They will finish cooking when returned to the sauce.
  • Serve this dish over pasta, rice, or with crusty bread to soak up the extra sauce.
  • For a brighter flavor, add a teaspoon of fresh lemon juice to the sauce just before returning the turkey.
