Make these quick, no-bake stuffed dates for a simple, creamy, and naturally sweet snack or dessert.

  • 12 large Medjool dates
  • 4 ounces cream cheese, softened (or vegan cream cheese alternative)
  • 1/4 cup fresh strawberries, finely chopped
  • 1 tablespoon maple syrup (optional, for extra sweetness)
  • 1 teaspoon lemon juice
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • 1 tablespoon chopped nuts (for topping, optional)

Instructions

  1. Slice each date lengthwise down one side and remove the pit. Set the dates aside.
  2. In a small bowl, combine the softened cream cheese, finely chopped strawberries, maple syrup (if using), lemon juice, vanilla extract, and salt. Mix until the filling is smooth and the strawberries are evenly distributed.
  3. Use a small spoon or piping bag to fill the cavity of each date with the strawberry cream cheese mixture. Do not overfill.
  4. Place the stuffed dates on a plate or small tray.
  5. Refrigerate for at least 15 minutes to allow the filling to firm up slightly.
  6. Before serving, sprinkle the tops with chopped nuts, if desired.

Notes

  • If you use frozen strawberries, thaw them completely and pat them very dry with a paper towel before chopping. Excess moisture will thin the filling.
  • For a Paleo or Vegan option, substitute the cream cheese with a cashew-based cream cheese alternative or a thick coconut cream base.
  • You can prepare these up to one day ahead and store them covered in the refrigerator.
