Prepare these simple, no-bake energy bites featuring bright lemon zest and dried blueberries. They are quick to make and provide portable energy.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/3 cup honey or maple syrup
  • 1/4 cup dried blueberries
  • 2 tablespoons chia seeds
  • 1 tablespoon fresh lemon zest
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Place all ingredients into a food processor.
  2. Pulse the mixture until it comes together and forms a sticky dough. Stop processing before it becomes completely smooth.
  3. If the mixture seems too dry, add one teaspoon of water or more almond butter until it holds together when pressed.
  4. Roll the dough into small, one-inch balls.
  5. Place the finished energy bites on a plate or baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to firm up before serving.

Notes

  • Store leftover energy bites in an airtight container in the refrigerator for up to one week.
  • For a different texture, you can roll the finished balls in shredded coconut or finely chopped nuts.
  • If you use maple syrup, the bites will be vegan.
