No-Bake Chocolate Cherry Cheesecake Cups

Make individual, creamy cheesecake cups with a chocolate base and cherry topping. This recipe requires no oven.

Ingredients

  • 1 1/2 cups crushed Oreo cookies
  • 6 tablespoons unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy whipping cream, cold
  • 1/4 cup cocoa powder, unsweetened
  • 1/2 cup cherry pie filling

Instructions

  1. Mix the crushed Oreo cookies and melted butter in a bowl until combined.
  2. Press about 2 tablespoons of the crumb mixture into the bottom of six small cups or ramekins. Chill the crusts for 15 minutes.
  3. In a separate bowl, beat the softened cream cheese, powdered sugar, and granulated sugar until smooth.
  4. Beat in the vanilla extract and cocoa powder until fully incorporated.
  5. In another bowl, whip the cold heavy cream until stiff peaks form.
  6. Gently fold the whipped cream into the chocolate cream cheese mixture until just combined.
  7. Spoon or pipe the cheesecake filling evenly over the chilled crusts.
  8. Top each cup with about 2 tablespoons of cherry pie filling.
  9. Refrigerate the cheesecake cups for at least 4 hours, or until firm, before serving.

Notes

  • You can substitute graham crackers for Oreos if you prefer a less chocolatey crust.
  • For a richer chocolate flavor, use Dutch-processed cocoa powder.
  • If you do not have small cups, you can make this recipe in a standard 8×8 inch pan and cut it into squares after chilling.
