1 teaspoon ground cinnamon

1 cup granulated sugar
1/2 cup packed light brown sugar
1 cup pumpkin puree (not pumpkin pie filling)
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350 degrees Fahrenheit. Grease and flour a standard 9×5 inch loaf pan.
In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt. Set this dry mixture aside.
In a separate medium bowl, whisk together the granulated sugar, brown sugar, pumpkin puree, vegetable oil, eggs, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients. Gently fold the mixture together using a spatula until just combined. Do not overmix; a few small lumps are acceptable. Overmixing develops gluten and reduces moisture.
Pour the batter evenly into the prepared loaf pan.
Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean or with only moist crumbs attached.
Let the bread cool in the pan on a wire rack for 15 minutes.
Carefully remove the bread from the pan and let it cool completely on the wire rack before slicing.
Notes
For extra moisture retention, wrap the cooled bread tightly in plastic wrap before storing it at room temperature.
