You deserve a restaurant-quality meal that is surprisingly simple. This creamy Marry Me Chicken Pasta brings tender chicken, sun-dried tomatoes, and a rich Parmesan sauce together in one pot for an easy weeknight dinner that impresses.

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • 2 cups chicken broth
  • 1 1/2 cups heavy cream
  • 1 cup Parmesan cheese, freshly grated
  • 8 ounces pasta (penne or rigatoni work well)
  • 1/4 cup fresh basil, chopped, for garnish

Instructions

  1. Season the chicken pieces with Italian seasoning, salt, and pepper.
  2. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken and set it aside.
  3. Reduce the heat to medium. Add the chopped sun-dried tomatoes and minced garlic to the skillet. Cook for 1 minute until fragrant.
  4. Pour in the white wine or chicken broth to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for 2 minutes.
  5. Add the 2 cups of chicken broth and the uncooked pasta to the skillet. Bring the mixture to a boil, then reduce heat to medium-low, cover, and simmer for about 10-12 minutes, stirring occasionally, until the pasta is nearly tender.
  6. Stir in the heavy cream. Let the sauce simmer gently for 3-5 minutes until it thickens slightly.
  7. Return the cooked chicken to the skillet. Stir in the grated Parmesan cheese until the sauce is smooth and creamy.
  8. Taste the sauce and adjust salt and pepper if needed.
  9. Remove from heat. Stir in most of the fresh basil. Serve immediately, garnished with the remaining basil.

Notes

  • For a richer flavor, use the oil from the jar of sun-dried tomatoes instead of plain olive oil for searing the chicken.
  • If you want a thicker sauce, let it simmer uncovered for a few extra minutes before adding the cheese.
  • This dish is excellent served with crusty bread to soak up the extra creamy sauce.
