  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, drained and roughly chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped (for garnish)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides of the chicken with salt, pepper, Italian seasoning, and garlic powder.
  2. Heat the olive oil and butter in a large, oven-safe skillet over medium-high heat.
  3. Add the seasoned chicken to the hot skillet and sear for 5 to 7 minutes per side until golden brown. Remove the chicken from the skillet and set it aside on a plate.
  4. Reduce the heat to medium. Add the minced garlic to the skillet and cook for about 30 seconds until fragrant. Do not let the garlic burn.
  5. Pour in the chicken broth and use a wooden spoon to scrape up any browned bits from the bottom of the pan. Let the broth simmer for 1 minute.
  6. Stir in the chopped sun-dried tomatoes and heavy cream. Bring the sauce to a gentle simmer.
  7. Reduce the heat to low. Stir in the grated Parmesan cheese until the sauce is smooth and slightly thickened. Taste the sauce and add more salt or pepper if needed.
  8. Return the seared chicken breasts to the skillet, nestling them into the sauce.
  9. Cover the skillet and let the chicken simmer gently in the sauce for 5 to 8 minutes, or until the internal temperature reaches 165 degrees Fahrenheit.
  10. Remove the skillet from the heat. Garnish with fresh chopped basil before serving. Serve this creamy chicken dinner immediately over pasta, rice, or with crusty bread.
