2 carrots, diced
2 celery stalks, diced

1 cup cooked, shredded chicken (rotisserie works well)
1/2 cup uncooked white rice (long grain or basmati)
1/4 cup fresh lemon juice

Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion, carrots, and celery. Cook until softened, about 5 to 7 minutes.
Add the grated ginger, ground turmeric, and black pepper to the pot. Stir constantly for 1 minute until fragrant. This step helps release the flavor of the spices.
Pour in the chicken broth and add the uncooked rice. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes, or until the rice is tender.
Stir in the cooked, shredded chicken. Continue to simmer for 5 more minutes to heat the chicken through.
Remove the pot from the heat. Stir in the fresh lemon juice. Taste the soup and add salt as needed.

Notes
For a quicker soup, use pre-cooked rice and add it in the last 5 minutes of simmering.
