1 tablespoon olive oil
1 pound smoked kielbasa sausage, sliced
1 medium yellow onion, chopped
2 cloves garlic, minced
4 cups chicken broth
3 medium russet potatoes, peeled and diced
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup heavy cream
2 tablespoons all-purpose flour
1/2 cup shredded sharp cheddar cheese (optional)
1 teaspoon smoked paprika (optional)
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the sliced kielbasa and cook until lightly browned, about 5 minutes. Remove the sausage with a slotted spoon and set aside.
Add the chopped onion to the pot and cook until softened, about 4 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Pour in the chicken broth. Add the diced potatoes, thyme, salt, and pepper. Bring the mixture to a boil, then reduce heat, cover, and simmer for 15 minutes, or until the potatoes are tender.
In a small bowl, whisk together the heavy cream and flour until smooth.
Stir the cream mixture into the simmering soup. Cook, stirring constantly, until the soup thickens slightly, about 3 to 5 minutes. Do not let it boil rapidly after adding the cream.
Return the cooked kielbasa to the pot. If using, stir in the cheddar cheese and smoked paprika until melted and combined.
Serve hot.
Notes
For a thicker soup, mash about one cup of the cooked potatoes against the side of the pot before adding the cream mixture.
You can substitute smoked sausage for kielbasa if needed.
If you prefer a less rich soup, substitute half-and-half for the heavy cream.
