A simple, low-carb soup recipe featuring ground beef, seasoned for taco flavor, and made without beans or corn.

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained (check for no added sugar)
  • 1 (15 ounce) can tomato sauce (check for no added sugar)
  • 4 cups beef broth
  • 2 tablespoons keto taco seasoning (chili powder, cumin, oregano, garlic powder, onion powder, salt, pepper)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup heavy cream (optional, for richness)

Instructions

  1. Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off any excess fat.
  2. Add the chopped onion and green bell pepper to the pot with the beef. Cook until the vegetables soften, about 5 minutes.
  3. Stir in the keto taco seasoning, salt, and pepper. Cook for 1 minute until fragrant.
  4. Pour in the diced tomatoes with green chilies, tomato sauce, and beef broth. Stir to combine all ingredients.
  5. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 15 minutes to allow flavors to meld.
  6. If using, stir in the heavy cream during the last 5 minutes of simmering.
  7. Taste and adjust seasoning if needed before serving.

Notes

  • Serve hot with keto-friendly toppings like shredded cheddar cheese, sour cream, avocado slices, or chopped cilantro.
  • To make your own keto taco seasoning, mix 1 tablespoon chili powder, 1 teaspoon cumin, 1/2 teaspoon oregano, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon salt, and 1/4 teaspoon pepper.
  • For a thicker soup, you can add 1/2 cup of cream cheese cubes during the last 10 minutes of simmering.
