Make a sturdy, low-carb pizza base using only four ingredients. This fathead dough recipe bakes up firm enough to hold your favorite toppings.

  • 1 3/4 cups shredded low-moisture mozzarella cheese
  • 2 ounces cream cheese
  • 1 large egg
  • 3/4 cup almond flour

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
  2. Combine the shredded mozzarella and cream cheese in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until the cheese is fully melted and smooth.
  3. Stir the egg and almond flour into the melted cheese mixture until a uniform dough forms.
  4. Place the dough between two sheets of parchment paper. Use a rolling pin to roll the dough into a 10 to 12-inch circle or rectangle, about 1/8 inch thick.
  5. Remove the top sheet of parchment paper. Poke the dough all over with a fork to prevent large bubbles.
  6. Bake the crust for 8 to 10 minutes, or until it starts to turn light golden brown.
  7. Remove the crust from the oven. Add your sauce and toppings.
  8. Return the pizza to the oven and bake for another 5 to 8 minutes, or until the cheese on top is melted and bubbly.

Notes

  • For a crispier crust, bake the naked crust for an extra 3 minutes before adding toppings.
  • If the dough is too sticky to handle, chill it for 10 minutes before rolling.
  • You can substitute coconut flour for almond flour, but use only 1/2 cup due to coconut flour’s high absorbency.
