8 large slices provolone cheese
4 slices thinly sliced salami
4 slices thinly sliced ham
4 slices thinly sliced capicola
4 slices thinly sliced mortadella
1/4 cup shredded iceberg lettuce
1/4 cup thinly sliced tomato
2 tablespoons olive oil
1 tablespoon red wine vinegar
1 teaspoon dried Italian seasoning
1/4 teaspoon black pepper
Instructions
Lay out the 8 slices of provolone cheese on a clean cutting board.
On top of each provolone slice, layer one slice each of salami, ham, capicola, and mortadella, covering most of the cheese surface.
Place a small amount of shredded lettuce and a thin slice of tomato near one edge of the layered meat and cheese.
Tightly roll the layered ingredients from the edge with the filling to the opposite edge, creating a compact roll-up. Secure with a toothpick if necessary.
In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, and black pepper to create the dressing.
Arrange the roll-ups on a serving platter. Drizzle the dressing evenly over the roll-ups just before serving.
Notes
For a firmer wrap, chill the assembled roll-ups for 15 minutes before drizzling with dressing.
You can substitute mozzarella for provolone if you prefer a milder cheese flavor.
Use thin slices of deli meat to prevent the roll-ups from becoming too thick to manage.
