Prepare a rich, low-carb Tuscan-style shrimp dish featuring a creamy garlic sauce, spinach, and sun-dried tomatoes, all cooked quickly in one skillet.

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1/2 teaspoon dried Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Season the shrimp lightly with salt and pepper.
  2. Heat the olive oil and butter in a large skillet over medium heat.
  3. Add the minced garlic and chopped sun-dried tomatoes to the skillet. Cook for 1 minute until fragrant.
  4. Add the shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque. Remove the shrimp from the skillet and set aside.
  5. Pour the heavy cream and chicken broth into the skillet. Bring the mixture to a gentle simmer.
  6. Stir in the Italian seasoning and red pepper flakes, if using. Let the sauce reduce slightly for 3 minutes.
  7. Stir in the Parmesan cheese until the sauce is smooth and thickened.
  8. Add the fresh spinach to the sauce and cook until wilted, about 2 minutes.
  9. Return the cooked shrimp to the skillet. Toss gently to coat everything in the sauce.
  10. Taste and adjust seasoning with salt and pepper before serving immediately.

Notes

  • For a thicker sauce, let the cream simmer for an extra minute before adding the cheese.
  • You can substitute chicken broth with vegetable broth if preferred.
  • Use oil-packed sun-dried tomatoes for better flavor, but drain them well before chopping.
