Make traditional Irish Potato Farls using leftover mashed potatoes. These simple griddle cakes are crispy on the outside and soft inside, perfect for your next Irish breakfast.

Ingredients

  • 2 cups cold mashed potatoes (ensure they are dry)
  • 4 tablespoons all-purpose flour, plus extra for dusting
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon salt
  • Pinch of black pepper

Instructions

  1. In a large bowl, combine the cold mashed potatoes, 4 tablespoons of flour, melted butter, salt, and pepper. Mix gently until just combined. Do not overmix.
  2. Lightly dust a clean work surface with flour. Turn the potato mixture onto the floured surface.
  3. Gently pat or roll the mixture into a circle about 1/2 inch thick.
  4. Use a knife or bench scraper to cut the circle into four equal wedges (farls).
  5. Heat a dry griddle or heavy-bottomed frying pan over medium heat. You do not need oil or butter for frying if your pan is good.
  6. Place the farls onto the hot griddle. Cook for 4 to 6 minutes per side, until they are golden brown and have a crisp exterior.
  7. Serve immediately while hot.

Notes

  • Use cold, firm mashed potatoes for the best texture; freshly made, hot mash will be too wet.
  • If your mash is slightly wet, add flour one tablespoon at a time until the dough holds its shape.
  • Serve these farls hot with butter, jam, or alongside eggs and bacon for a full Irish breakfast.
