Learn how to cook a perfectly juicy and tender turkey breast in your Instant Pot in under an hour. This no-fail pressure cooker recipe includes instructions for making simple, flavorful gravy from the pot drippings, making it ideal for weeknight dinners or small holiday gatherings.

  • 1 (3-4 lb) boneless, skin-on turkey breast
  • 1 cup chicken broth or water
  • 2 tablespoons olive oil
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • For the Gravy:
  • 1 cup reserved turkey broth
  • 2 tablespoons cornstarch
  • 1/4 cup cold water

Instructions

  1. Pat the turkey breast dry using paper towels. This helps the seasoning stick.
  2. In a small bowl, mix the olive oil, rosemary, thyme, garlic powder, onion powder, salt, and pepper to create a paste.
  3. Rub the herb paste evenly all over the turkey breast skin.
  4. Pour 1 cup of chicken broth or water into the inner pot of your Instant Pot. Place the trivet inside.
  5. Carefully place the seasoned turkey breast, skin-side up, onto the trivet.
  6. Secure the lid on the Instant Pot and set the valve to Sealing.
  7. Cook on High Pressure (Manual/Pressure Cook) for 45 minutes for a 3-4 lb breast.
  8. When the cooking time finishes, allow for a Natural Pressure Release (NPR) for 15 minutes. After 15 minutes, carefully move the valve to Venting to release any remaining pressure.
  9. Remove the turkey breast from the pot and place it on a cutting board. Tent loosely with foil and let it rest for 10 minutes before slicing.
  10. To make the gravy, carefully pour the liquid from the Instant Pot into a measuring cup or bowl, skimming off excess fat if desired. You need 1 cup of broth.
  11. In a small bowl, whisk together the cornstarch and 1/4 cup of cold water until smooth to create a slurry.
  12. Pour the reserved 1 cup of turkey broth into the Instant Pot inner pot. Set the pot to Sauté mode (Normal setting).
  13. Once the broth is simmering, slowly whisk in the cornstarch slurry. Continue whisking until the gravy thickens, about 1-2 minutes.
  14. Slice the turkey breast against the grain and serve immediately with the homemade herb gravy.

Notes

  • For the juiciest results, use a meat thermometer; the internal temperature should reach 165°F in the thickest part of the breast.
  • If you prefer a crispier skin, you can briefly place the cooked turkey breast under your oven’s broiler for 3-5 minutes after resting. Watch it closely to prevent burning.
  • This recipe works well for boneless turkey breast cuts, which cook faster than bone-in options.
