Add the garlic and ginger. Cook for 1 minute until fragrant.
Stir in the cumin, turmeric, cinnamon, cayenne pepper (if using), salt, pepper, and Ras el Hanout. Cook for 30 seconds, stirring constantly.
Pour in the vegetable broth and scrape the bottom of the pot to release any browned bits.
Add the sweet potatoes, diced tomatoes (with juice), rinsed chickpeas, and dried apricots. Do not stir after adding the last ingredients.
Secure the lid and set the vent to Sealing. Select Manual or Pressure Cook on High for 8 minutes.
When the cooking cycle finishes, allow a Natural Pressure Release (NPR) for 10 minutes, then carefully move the valve to Venting to release any remaining pressure.
Open the lid. Stir in the lemon juice. Taste and adjust salt if needed.
Serve hot, garnished with fresh cilantro.

Serve this stew over prepared couscous or quinoa for a complete meal.
For a richer flavor, you can substitute 1/4 cup of vegetable broth with preserved lemon rind, finely chopped.
This stew freezes well for future meals. Cool completely before transferring to airtight containers.
