Creamy One-Pot Instant Pot Lasagna Soup

Make a hearty, cheesy lasagna soup quickly in your Instant Pot. This one-pot recipe delivers classic lasagna flavor with minimal cleanup, perfect for a fast weeknight meal.

  • 1 tablespoon olive oil
  • 1 pound ground beef or Italian sausage
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (24 ounce) jar marinara sauce
  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces lasagna noodles, broken into 1-inch pieces
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Set the Instant Pot to Sauté mode. Add olive oil. Brown the ground meat, breaking it up as it cooks. Drain excess fat.
  2. Add the chopped onion to the pot and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Pour in the marinara sauce, beef broth, diced tomatoes (with juice), basil, oregano, salt, and pepper. Stir well to combine everything.
  4. Add the broken lasagna noodles to the pot. Press them down slightly so they are mostly submerged in the liquid. Do not stir after adding noodles.
  5. Secure the lid and set the valve to Sealing. Select Manual or Pressure Cook on High for 4 minutes.
  6. When the cooking time finishes, allow a Natural Pressure Release (NPR) for 5 minutes, then carefully perform a Quick Release (QR) for any remaining pressure.
  7. Stir the soup well. Select Sauté mode again. Stir in the heavy cream. Let the soup simmer for 2-3 minutes until slightly thickened.
  8. Stir in half of the mozzarella cheese and half of the Parmesan cheese until melted and creamy.
  9. Ladle the soup into bowls. Top each serving with the remaining mozzarella and Parmesan cheese.

Notes

  • For a richer flavor, use Italian sausage instead of ground beef.
  • If you do not have an Instant Pot, you can make this recipe on the stovetop by simmering the ingredients (after browning meat) for 15-20 minutes, or until the noodles are tender.
  • Use low-fat milk instead of heavy cream for a lighter version, though the texture will be less rich.
