Easy Instant Pot Lazy Lasagna

Make a comforting, cheesy lasagna in your Instant Pot without pre-boiling noodles or using a springform pan. This one-pot method simplifies cleanup for a quick weeknight dinner.

Ingredients

  • 1 pound ground beef or Italian sausage
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1 (24 ounce) jar marinara sauce
  • 1 (15 ounce) can tomato sauce
  • 1 cup water
  • 12 no-boil lasagna noodles, broken into thirds
  • 1 (15 ounce) container ricotta cheese
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups shredded mozzarella cheese

Instructions

  1. Brown the ground meat in the Instant Pot on the Sauté setting. Drain any excess fat.
  2. Stir in the Italian seasoning and garlic powder, cooking for one minute until fragrant.
  3. Pour in the marinara sauce, tomato sauce, and water. Stir to combine everything on the bottom of the pot.
  4. Place the broken lasagna noodles evenly over the sauce mixture. Do not stir them in.
  5. In a separate bowl, mix the ricotta cheese, egg, Parmesan cheese, salt, and pepper until combined.
  6. Drop spoonfuls of the ricotta mixture over the noodles.
  7. Sprinkle the mozzarella cheese evenly over the top layer.
  8. Cover the pot with the lid and set the vent to Sealing.
  9. Cook on High Pressure for 8 minutes.
  10. When the cooking time finishes, allow for a Natural Pressure Release for 10 minutes, then carefully move the valve to Venting to release any remaining pressure.
  11. Remove the lid. Let the lasagna rest for 5 minutes before serving directly from the pot.

Notes

  • If you prefer a thicker sauce, reduce the water amount to 3/4 cup.
  • For a richer flavor, substitute half the ground beef with Italian sausage.
  • If you do not have no-boil noodles, use regular lasagna noodles broken into pieces, but increase the cook time to 10 minutes on High Pressure.
