Make this simple, creamy, non-alcoholic drink combining pineapple and coconut flavors, perfect for serving chilled.

Ingredients

  • 1 cup frozen pineapple chunks
  • 1/2 cup unsweetened pineapple juice
  • 1/4 cup full-fat coconut cream (the thick part from a can of coconut milk)
  • 2 tablespoons simple syrup (adjust to taste)
  • 1/2 cup ice cubes
  • 1/4 cup cold water or sparkling water (optional, for thinning)
  • Lime wedges for garnish
  • Toasted coconut flakes for garnish

Instructions

  1. Place the frozen pineapple chunks, pineapple juice, coconut cream, simple syrup, and ice cubes into a blender.
  2. Blend on high speed until the mixture is completely smooth and creamy. Stop and scrape down the sides if necessary.
  3. If the mixture is too thick, add the cold water or sparkling water one tablespoon at a time until you reach your desired consistency.
  4. Taste the mocktail and add more simple syrup if you prefer it sweeter.
  5. Pour the mixture into a chilled glass.
  6. Garnish the rim with a lime wedge and sprinkle toasted coconut flakes over the top before serving immediately.

Notes

  • For a stronger coconut flavor, use coconut milk instead of coconut cream, but the texture will be less thick.
  • If you do not have frozen pineapple, use fresh pineapple and increase the amount of ice by 1/2 cup.
  • To make simple syrup, heat equal parts sugar and water until the sugar dissolves, then cool completely.
