1 tablespoon olive oil
1 large onion, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
1 pound lean ground beef or ground turkey
1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can tomato sauce
1 cup beef or chicken broth
2 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and bell pepper and cook until softened, about 5 minutes.
Add the minced garlic and cook for 1 minute more until fragrant.
Add the ground meat to the pot. Break it up with a spoon and cook until browned. Drain off any excess fat.
Stir in the chili powder, cumin, and oregano. Cook for 1 minute, stirring constantly.
Add the rinsed beans, crushed tomatoes, tomato sauce, and broth. Stir well to combine all ingredients.
Bring the mixture to a simmer. Reduce the heat to low, cover, and let it cook for at least 30 minutes, stirring occasionally. For deeper flavor, simmer for 1 hour.
Season with salt and pepper to taste before serving.
Notes
For a low carb option, omit the beans.
This chili freezes well for future meals. Cool completely before transferring to freezer-safe containers.
