  • 1 (8 ounce) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pure mint extract
  • 1/4 teaspoon green food coloring (optional, for classic color)
  • 1 1/2 cups heavy whipping cream, cold
  • 1/2 cup powdered sugar (for whipped cream)
  • 1/4 cup mini chocolate chips (for garnish)

Instructions

  1. Prepare the crust: Mix the chocolate cookie crumbs and melted butter in a medium bowl until the crumbs are evenly moistened. Press the mixture firmly into the bottom and up the sides of a 9-inch pie plate. Place the crust in the freezer while you prepare the filling.
  2. Make the cream cheese base: In a large bowl, beat the softened cream cheese with an electric mixer until it is smooth and light. Add 1 cup of powdered sugar, vanilla extract, mint extract, and green food coloring (if using). Beat until everything is fully combined and smooth.
  3. Whip the cream: In a separate, clean bowl, beat the cold heavy whipping cream and the remaining 1/2 cup of powdered sugar until stiff peaks form. Be careful not to overbeat.
  4. Combine the filling: Gently fold the whipped cream into the cream cheese mixture in two additions. Fold until just combined; do not overmix, as you want to keep the filling light and airy.
  5. Assemble the pie: Pour the mint filling into the chilled Oreo crust and spread it evenly with a spatula.
  6. Chill: Cover the pie loosely with plastic wrap and refrigerate for at least 6 hours, or preferably overnight, until the filling is firm.
  7. Garnish and serve: Before serving, sprinkle the top of the pie with mini chocolate chips. Slice and serve this easy grasshopper pie cold.

  • If you prefer a frozen mint pie texture, you can freeze this pie for up to 4 hours before serving. Let it sit at room temperature for 10 minutes before slicing.
  • For a richer chocolate flavor in the crust, use chocolate wafer cookies instead of standard chocolate sandwich cookies.
  • If you want to use alcohol, substitute 2 tablespoons of the heavy cream with 1 tablespoon of crème de menthe and 1 tablespoon of crème de cacao. Reduce the mint extract slightly if you do this.
