8 oz soft goat cheese log
2 tablespoons honey
1/4 cup shelled pistachios, roughly chopped
1 teaspoon fresh thyme leaves (optional)
1 tablespoon olive oil
Pinch of black pepper
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a small, oven-safe baking dish or line a small baking sheet with parchment paper.
Slice the goat cheese log into 12 equal rounds. Place the rounds in the prepared baking dish or on the baking sheet.
Drizzle the olive oil evenly over the goat cheese rounds.
Bake for 8 to 10 minutes, or until the cheese is soft and slightly warmed through. Do not overbake.
Remove the cheese from the oven. Immediately drizzle the honey over the warm cheese rounds.
Sprinkle the chopped pistachios and fresh thyme (if using) over the honey. Add a small grind of black pepper to each bite.
Serve immediately with small crackers or baguette slices for scooping.
Notes
You can substitute pecans or walnuts for pistachios if you prefer a different nut flavor.
For a sharper flavor, use a small amount of balsamic glaze instead of extra honey.
These bites are best served warm, directly after baking.
