1/2 cup milk (dairy or non-dairy)
1 teaspoon vanilla extract

Instructions
Prepare the crunch coating: In a shallow dish, mix the granulated sugar and the 1 teaspoon of cinnamon until combined. In a separate shallow dish, place the crushed gluten-free cornflakes.
Whisk the eggs, milk, vanilla extract, and 1/2 teaspoon of cinnamon together in a third dish until uniform.
Dip each slice of gluten-free bread into the egg mixture, allowing it to soak for only 15 to 20 seconds per side. Gluten-free bread absorbs liquid quickly.
Immediately press both sides of the soaked bread into the cinnamon sugar mixture, coating evenly.
Next, press both sides of the bread into the crushed cornflakes, pressing gently to adhere the crunch coating.
Heat a large skillet or griddle over medium heat. Add butter or oil.
Cook the coated bread for 3 to 4 minutes per side until golden brown and the coating is crisp. Reduce heat if the coating browns too fast before the center heats through.
While the toast cooks, mix the maple syrup and bourbon (if using) for the glaze.
Serve the French toast immediately, drizzled with the glaze.
Notes
Use thick-cut gluten-free bread to prevent sogginess when soaking.
Do not over-soak the bread; a quick dip is best for a crisp exterior.
