  • 1/2 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 3/4 cups gluten-free all-purpose flour blend (with xanthan gum)
  • 1/4 cup almond flour
  • 1/2 teaspoon salt
  • 1/2 cup raspberry jam
  • 1/4 cup sliced almonds, lightly toasted (for topping)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg yolk, vanilla extract, and almond extract until combined.
  4. In a separate bowl, whisk together the gluten-free flour blend, almond flour, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined into a soft dough. Do not overmix.
  6. Roll the dough into 1-inch balls. Place them on the prepared baking sheets, spaced about 2 inches apart.
  7. Use your thumb or the back of a small measuring spoon to press a deep indentation into the center of each dough ball.
  8. Fill each indentation with about 1/2 teaspoon of raspberry jam.
  9. Sprinkle the tops of the cookies lightly with toasted sliced almonds.
  10. Bake for 12 to 15 minutes, or until the edges are lightly golden. The centers may look slightly soft.
  11. Let the cookies cool on the baking sheets for 5 minutes before carefully transferring them to a wire rack to cool completely.
  12. Dust with powdered sugar before serving, if desired.

Notes

  • Use a gluten-free flour blend that already contains xanthan gum for the best texture.
  • If your jam seems runny, you can stir in 1/2 teaspoon of cornstarch before filling the cookies to help it set during baking.
  • For clean indentations, chill the dough balls for 15 minutes before pressing your thumb into them.
