Make rich, fudgy brownies using sweet potato puree for natural moisture and sweetness. This recipe is simple, uses one bowl, and offers easy modifications for gluten-free or vegan diets.

  • 1 cup sweet potato puree (about 1 medium sweet potato)
  • 1/2 cup melted coconut oil or butter
  • 1 cup packed brown sugar or maple syrup
  • 2 large eggs or 2 flax eggs (1 tbsp ground flaxseed + 3 tbsp water, rested 5 minutes)
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour or gluten-free blend (like oat or almond flour)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, whisk together the sweet potato puree, melted coconut oil, and sugar until smooth.
  3. Whisk in the eggs (or flax eggs) and vanilla extract until fully combined.
  4. Add the cocoa powder, flour, baking powder, and salt directly to the wet ingredients. Mix gently with a spatula until just combined. Do not overmix.
  5. Fold in half of the chocolate chips, if using.
  6. Pour the batter into the prepared pan and spread evenly. Sprinkle the remaining chocolate chips on top.
  7. Bake for 25 to 30 minutes. The edges should look set, and a toothpick inserted near the center should come out with moist crumbs, not wet batter.
  8. Let the brownies cool completely in the pan on a wire rack before lifting out and cutting into squares. Cooling helps achieve the fudgiest texture.

Notes

  • For a flourless version, substitute the flour with an equal amount of almond flour.
  • If you use maple syrup instead of brown sugar, the brownies may be slightly softer.
  • You can substitute dairy-free chocolate chips to keep the recipe dairy-free.
  • Ensure your sweet potato puree is smooth; microwaving or steaming the sweet potato until very soft helps achieve this.
