Bake French toast batter in muffin tins for a simple, portable breakfast treat. These muffins are great for meal prep and feature a sweet cinnamon sugar crust.

  • 1 loaf (about 12 slices) thick-cut bread (brioche or challah recommended), cubed
  • 6 large eggs
  • 1 cup milk (whole or 2%)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup granulated sugar (for topping)
  • 1 tablespoon ground cinnamon (for topping)
  • 2 tablespoons melted butter (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a standard 12-cup muffin tin well.
  2. Cube the bread into roughly 1-inch pieces. Place the bread cubes evenly into the prepared muffin cups, filling them about three-quarters full.
  3. In a large bowl, whisk together the eggs, milk, vanilla extract, 1 teaspoon cinnamon, and nutmeg until fully combined.
  4. Pour the egg mixture evenly over the bread cubes in the muffin tin, allowing the bread to soak up the liquid for about 5 minutes. Press down gently if needed to submerge the bread.
  5. In a small bowl, mix the 1/4 cup granulated sugar, 1 tablespoon cinnamon, and melted butter until crumbly. Sprinkle this mixture over the top of each muffin cup.
  6. Bake for 18 to 22 minutes, or until the tops are golden brown and the center is set.
  7. Let the muffins cool in the tin for 5 minutes before carefully removing them to a wire rack to cool slightly before serving.

Notes

  • You can prepare the bread and egg mixture the night before, pour it into the muffin tin, cover, and refrigerate. Add 5 extra minutes to the baking time if baking cold.
  • Use stale or slightly dry bread for the best texture; it absorbs the custard better.
  • Serve these warm with maple syrup or powdered sugar if desired.
