  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 large yellow onion, thinly sliced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1/2 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 cup shredded Gruyère cheese (or Provolone)
  • 1/4 cup crispy fried onions (for topping)

Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
  2. Heat the olive oil in a large oven-safe skillet over medium heat. Add the sliced onion and cook slowly, stirring occasionally, for 15 to 20 minutes until the onions are deeply caramelized and soft. Stir in the dried thyme, salt, and pepper during the last minute of cooking. Remove the onions from the skillet and set them aside.
  3. In a bowl, whisk together the cream of mushroom soup, beef broth, and Worcestershire sauce until smooth. This creates your savory sauce base.
  4. Place the chicken breasts in the prepared baking dish. Pour the soup mixture evenly over the chicken.
  5. Spoon the caramelized onions over the top of the chicken and sauce.
  6. Bake for 25 minutes.
  7. Remove the dish from the oven and sprinkle the shredded Gruyère cheese evenly over the top of the chicken and onions.
  8. Return the dish to the oven and bake for another 5 to 10 minutes, or until the cheese is melted, bubbly, and lightly golden brown.
