Prepare this simple, crowd-pleasing Eggs Benedict Casserole the night before for a hassle-free brunch. It combines classic components in a savory egg bake topped with a quick blender Hollandaise sauce.

  • 12 slices English muffins, cut into 1-inch cubes
  • 1 pound Canadian bacon or ham, cut into pieces
  • 12 large eggs
  • 2 cups milk (whole or 2%)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded Gruyère cheese
  • 1/2 cup shredded Parmesan cheese
  • For Hollandaise: 4 egg yolks
  • For Hollandaise: 1/2 cup (1 stick) unsalted butter, melted
  • For Hollandaise: 1 tablespoon fresh lemon juice
  • For Hollandaise: Pinch of salt and cayenne pepper

Instructions

  1. Grease a 9×13 inch baking dish. Arrange half of the cubed English muffins in the bottom of the dish. Top evenly with the Canadian bacon pieces.
  2. In a large bowl, whisk together the eggs, milk, Dijon mustard, salt, and pepper until combined.
  3. Pour half of the egg mixture evenly over the muffin and bacon layer. Top with the remaining English muffins. Pour the rest of the egg mixture over the top layer.
  4. Sprinkle the Gruyère and Parmesan cheeses over the top. Cover the dish tightly with plastic wrap. Refrigerate for at least 4 hours or overnight.
  5. When ready to bake, preheat your oven to 350°F (175°C). Remove the plastic wrap.
  6. Bake the casserole uncovered for 45 to 55 minutes, or until the center is set and the top is golden brown. Let it rest for 10 minutes before serving.
  7. While the casserole rests, make the Hollandaise: Place egg yolks, lemon juice, salt, and cayenne in a blender. Blend on low speed. Slowly drizzle the hot melted butter into the blender while running until the sauce is thick and emulsified.
  8. Slice the casserole and serve immediately with a spoonful of the easy blender Hollandaise sauce over each portion.

  • If you are short on time, you can assemble this casserole up to 4 hours ahead of time without refrigerating. Adjust the baking time slightly if baking immediately from room temperature.
  • For an extra layer of flavor, lightly toast the English muffin cubes before assembling the casserole.
