Make this creamy egg and ricotta toast for a high-protein breakfast that is quick and nourishing. It is perfect for busy mornings or brunch.

  • 2 slices sourdough bread
  • 1/4 cup whole milk ricotta cheese
  • 1 large egg
  • 1 teaspoon olive oil or butter
  • Pinch of salt
  • Pinch of black pepper
  • Optional: Red pepper flakes for topping

Instructions

  1. Lightly toast your sourdough bread slices until golden brown.
  2. While the bread toasts, prepare the egg. Heat the olive oil or butter in a small non-stick skillet over medium-low heat.
  3. Crack the egg into the skillet. Cook the egg to your preference; a runny yolk works well for this recipe. Season with salt and pepper while cooking.
  4. Once the bread is toasted, spread an even layer of ricotta cheese on each slice.
  5. Carefully place the cooked egg on top of the ricotta layer on one slice of toast.
