  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream or plain Greek yogurt
  • 1/2 cup milk (whole milk works best)
  • 1/2 cup finely ground pistachios (or 1/4 cup pistachio pudding mix for extra moisture)
  • 1/2 cup chopped raw pistachios
  • Optional Topping: 1/4 cup powdered sugar mixed with 1 tablespoon milk and 1/4 cup chopped pistachios

Instructions

  1. Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set this dry mixture aside.
  3. In a large bowl, use an electric mixer to cream together the softened butter and granulated sugar until light and fluffy, about 2 minutes. This step helps create a tender crumb.
  4. Beat in the eggs one at a time, mixing well after each addition. Mix in the vanilla extract.
  5. In a separate small bowl, whisk together the sour cream (or yogurt) and milk.
  6. Alternate adding the dry ingredients and the wet ingredients to the butter mixture, beginning and ending with the dry ingredients (add 1/3 dry, 1/2 wet, 1/3 dry, 1/2 wet, 1/3 dry). Mix only until just combined. Do not overmix; a few streaks of flour are fine. Overmixing develops gluten and makes muffins tough.
  7. Gently fold in the finely ground pistachios (or pudding mix) and the chopped pistachios.
  8. Fill the muffin cups nearly full, about 3/4 to 7/8 full. For bakery-style domes, place the tin in the 400°F oven for 5 minutes, then reduce the temperature to 375°F (190°C) without opening the oven door, and bake for an additional 15-18 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  10. If using the optional topping, whisk the powdered sugar and milk until smooth. Drizzle over the cooled muffins and sprinkle with extra chopped pistachios.
