Make this simple mixed berry cobbler featuring a juicy, jammy filling and a buttery biscuit topping. This recipe works well with both fresh and frozen berries for a classic summer dessert.

  • 4 cups mixed berries (fresh or frozen, do not thaw if frozen)
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar (for topping)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into small pieces
  • 1/2 cup milk
  • 1 large egg, beaten (for egg wash)
  • 1 teaspoon coarse sugar (for sprinkling)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish or a similar 1.5-quart dish.
  2. Prepare the berry filling: In a large bowl, gently toss the mixed berries with 1/2 cup sugar, cornstarch, lemon juice, and vanilla extract until the berries are coated. Pour this mixture into the prepared baking dish.
  3. Prepare the biscuit topping: In a separate medium bowl, whisk together the flour, 2 tablespoons sugar, baking powder, and salt.
  4. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
  5. Pour in the milk and stir just until a shaggy dough forms. Do not overmix.
  6. Drop spoonfuls of the biscuit dough evenly over the berry filling. The topping does not need to cover the entire surface; gaps allow steam to escape and create a nice crust.
  7. Brush the tops of the biscuits lightly with the beaten egg wash and sprinkle with coarse sugar.
  8. Bake for 40 to 45 minutes, or until the topping is golden brown and the berry filling is bubbling thickly around the edges.
  9. Let the cobbler cool on a wire rack for at least 15 minutes before serving warm.

Notes

  • If you use frozen berries, you may need to add 5 to 10 minutes to the baking time.
