1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1/2 cup soy sauce (low sodium preferred)
1/4 cup honey
2 tablespoons rice vinegar
1 tablespoon sesame oil
4 cloves garlic, minced
1 teaspoon ground ginger
1/4 teaspoon black pepper
Wooden or metal skewers (if using wooden, soak them in water for 30 minutes)
Optional garnish: Sesame seeds and chopped green onions
Instructions
In a medium bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, ground ginger, and black pepper to create the marinade.
Place the cubed chicken into a resealable bag or shallow dish. Pour half of the marinade over the chicken, reserving the other half for basting/sauce later.
Marinate the chicken in the refrigerator for at least 30 minutes, or up to 4 hours. Do not marinate longer than 4 hours due to the acid content.
Thread the marinated chicken pieces onto the prepared skewers, leaving a small space between each piece. Discard the marinade that touched the raw chicken.
To Grill: Preheat your grill to medium-high heat (about 400 degrees F). Lightly oil the grates. Place the skewers on the grill and cook for 4-5 minutes per side, brushing with the reserved marinade during the last few minutes of cooking. Cook until the internal temperature reaches 165 degrees F.
To Bake: Preheat your oven to 400 degrees F. Line a baking sheet with foil and place a wire rack on top. Arrange the skewers on the rack. Bake for 15-20 minutes, turning halfway through and brushing with the reserved marinade during the last 5 minutes.
Remove the skewers from the heat. Let them rest for 5 minutes before serving. Garnish with sesame seeds and green onions if desired.
Notes
For extra flavor, you can add chunks of onion or bell pepper between the chicken pieces on the skewers.
To make a thicker sauce, simmer the reserved marinade in a small saucepan over medium heat until it reduces slightly, about 5 minutes.
If you prefer a smoky flavor when baking, add 1/2 teaspoon of liquid smoke to the marinade.
