  • 2 large ripe tomatoes, cut into wedges
  • 1 large cucumber, peeled, seeded, and sliced thickly
  • 1/2 red onion, thinly sliced
  • 1 cup Kalamata olives, whole or pitted
  • 8 ounces block of good quality feta cheese, cut into large cubes
  • 1/2 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/4 teaspoon sea salt
  • Freshly ground black pepper to taste

Instructions

  1. Prepare your vegetables: Cut the tomatoes into wedges, slice the cucumber, and thinly slice the red onion. Place all prepared vegetables and the Kalamata olives into a large mixing bowl.
  2. Make the dressing: In a small jar, combine the extra virgin olive oil, red wine vinegar, dried oregano, sea salt, and black pepper. Close the jar tightly and shake well until the dressing emulsifies slightly.
  3. Assemble the salad: Gently add the cubed feta cheese on top of the vegetables in the bowl. Do not toss yet.
  4. Dress the salad: Pour the homemade Greek salad dressing evenly over the vegetables and feta.
  5. Serve immediately: Gently toss the salad just before serving to coat the ingredients lightly. Serve this refreshing vegetable salad right away for the best texture.
