3 pounds potatoes, peeled and cubed
1 large onion, chopped
4 cups chicken broth
1 (10.5 ounce) can cream of chicken soup
1 (10.5 ounce) can cream of celery soup
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 cup milk
1 cup shredded cheddar cheese
1/2 cup sour cream
1/2 cup cooked bacon, crumbled (for topping)
2 green onions, sliced (for topping)
Instructions
Place the cubed potatoes and chopped onion into the slow cooker.
Pour the chicken broth over the potatoes and onions.
Add the cream of chicken soup, cream of celery soup, salt, pepper, and garlic powder to the slow cooker. Stir everything together gently.
Cover the slow cooker and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the potatoes are very tender.
Remove the lid. Use a potato masher to mash the potatoes directly in the slow cooker until you reach your desired consistency; leave some chunks for texture.
Stir in the milk and sour cream. Cook on low for an additional 15 minutes, uncovered, until heated through. Do not boil after adding dairy.
Stir in the shredded cheddar cheese until melted and smooth.
Serve the soup hot, topped with crumbled bacon and sliced green onions.
Notes
For a thicker soup, mix 2 tablespoons of cornstarch with 1/4 cup of cold water and stir into the soup during the last 30 minutes of cooking.
You can substitute vegetable broth for chicken broth to make this recipe vegetarian.
Shredded cheese melts best when added at the very end.
