You can make this sweet, soft, and perfectly swirled cinnamon bread easily, even if you are new to baking. This no-yeast recipe uses simple pantry staples for a delicious breakfast or snack.

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (for the batter)
  • 1 cup granulated sugar (for the batter)
  • 1 large egg
  • 1 cup milk
  • 1/2 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • For the Cinnamon Swirl:
  • 1/2 cup packed brown sugar
  • 1 tablespoon ground cinnamon
  • 4 tablespoons unsalted butter, softened

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, salt, 1 teaspoon cinnamon, and 1 cup granulated sugar.
  3. In a separate medium bowl, whisk together the egg, milk, oil or melted butter, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix them together with a spatula just until combined. Do not overmix; a few lumps are fine.
  5. Prepare the cinnamon swirl filling: In a small bowl, mix the brown sugar and 1 tablespoon cinnamon together. Cut in the 4 tablespoons of softened butter until the mixture resembles coarse crumbs.
  6. Pour half of the batter into your prepared loaf pan. Sprinkle half of the cinnamon swirl mixture evenly over the batter.
  7. Pour the remaining batter over the top. Sprinkle the rest of the cinnamon swirl mixture over the top layer of batter.
  8. Use a knife or skewer to gently swirl the filling through the batter a few times to create ribbons. Do not over-swirl.
  9. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes before carefully turning it out onto a wire rack to cool completely before slicing.

Notes

  • If you want a glaze, mix 1 cup powdered sugar with 2-3 tablespoons of milk and a splash of vanilla. Drizzle over the cooled bread.
  • For an extra soft texture, ensure your milk and egg are at room temperature before mixing.
  • This quick bread freezes well once completely cooled. Wrap tightly in plastic wrap and then foil.
